It is so easy to immerse yourself in a community that celebrates vivacity, energy, and unabashed passion. Whether it is the dancehall riddim, the mélange of its gastronomical makeup, or the warmth of the people, there is a certain electrical current which runs through the Latin belt and is synonymous to its hospitality, its people, and its culture.

Most good nights have a hue of tequila, con lima y sal, enveloping them and are almost always accompanied by music that plays late into the early hours of the morning.

Such an atmosphere evokes a specific geolocation, either in the cobbled lanes of Cuba or the tropics of Latin America, but that doesn’t mean its flavours cannot be transported.

Madura Rooftop & Bar at the Skyview Hotel Bangkok aims to recreate that very air in the heart of Bangkok.

THE AMBIENCE

Space: As soon as you step off on the 32nd floor of the Skyview Hotel, you are greeted by a colour palette equal parts leafy green, earthy brown, and reddish brick orange.

Spread out across the entire floor, Madura Rooftop & Bar is broken into several sections. Entering the restaurant, there is the mixed dining space with options between high tables and more cosy booth seating.

This area is named Lucero, after the morning star which is featured in Madura’s logo as well as the mosaic paintings on the wall in the space.

To the right is the grand bar space that opens out towards the outdoor rooftop seating area. In the evenings, live music plays until late.

If you take a left, a homestyle foyer greets you (alongside a painting of Frida Kahlo) and guides you towards the quieter, seated dining area.

Crowd: The different corners of Madura Rooftop & Bar make it an incredibly versatile choice for a night out on the town.

For a date night, the ambient lighting, the floor-to-ceiling windows looking out on the Sukhumvit skyline, and the speakers gently crooning jazz rhythms are the perfect setup.

In a big group? The Lucero dining area peering into the open kitchen setup is both lively and perfect for those Instagram photo dumps—and close enough to the live music so it feels like a fiesta all night.

THE CULINARY SELECTION

Our journey at Madura Rooftop & Bar started with a welcome drink presented to us in a green ceramic recreation of an Aztec andesite statue.

Before we get to the delectable menu in store at Madura, I would be remiss if I did not mention the fabulous restaurant team at Madura Rooftop & Bar.

From the restaurant manager to the maître d’, the hospitality and conviviality we were given truly took the experience to another level.

When talking about Latin flavours, it would be a faux pas not to mention the expansive menu of drinks. The Spicy Margarita (THB 490) kicked off the night.

What sets this apart from your run-of-the-mill margarita is the signature Madura house-made spicy sauce.

With the entire menu at our fingertips, naturally we began with the starters.

Arriving at the table as a pop of colour was the Hokkaido scallop “leche de tigre” (THB 690). A scallop ceviche in the middle of a melon ring, served with leche de tigre—an iconic Peruvian citrus-based marinade which supposedly gives you the strength and energy of the tiger, making it a perfect pick-me-up or even a hangover cure.

The Grilled mushroom taco (THB 400) was a pleasant surprise as it contained a stuffing of red mole. Red mole or mole rojo is a Mexican dressing that has an earthy flavour reminiscent of chocolate.

Coupled with the mushroom, it made for an incredibly rustic bite. Our final starter was the Empanada filled with three cheeses (THB 260).

Our tip? Definitely have it with the Madura Brava Heat sauce for an extra punch. Alternatively, speak to their incredibly charming and knowledgeable sommelier and you might just end up with a delectable bottle of champagne like us.

As the starters folded into our appetites, it was time for the mains.

The Roasted Chilean seabass (THB 1,150) arrived nestled in corn husks, with a topping of red peppers and mussel, inspired by the cooking in Spanish home kitchens.

The “Peruvian style” dry-aged roasted duck breast (THB 900) came next. What’s special about this dish is the 14-day in-house dry-aged duck breast, offering a robust, meaty flavour complemented perfectly by the duck jus and preserved finger chillis.

Accompanying the mains were the sides. An option of Smoked sweet potatoes (THB 230) topped with ricotta, brown butter, and hazelnut made for a bite that simply melted on the tongue with a slightly nutty aftertaste.

For those craving a little crunch, the Flame kissed snap peas (THB 210) with parmesan is a pleasant reprieve.

We were lucky enough to sample three of Madura’s desserts, beginning with the Pionono de chocolate ancho (THB 350).

The spicy dark chocolate and ancho chile chocolate ganache really elevated this classic chocolate cake.

Keeping with the theme was the Havana-style warm rum cake (THB 300), the combination of the brown sugar cake and the dark Caribbean rum made this an instant classic.

MASALA RECOMMENDS

There was one dish which stood out above the rest.

Crafted as though it was cooked in your abuelita’s warm, crackling kitchen while a telenovela blared in the living room, the Arroz con pollo (THB 790) is a Cuban-style chicken rice made with house spices and chillies.

An incredibly hearty dish, we think this is best enjoyed in good company. …And with a spicy margarita or two!
