Dr. Kaviraj Khialani showcases the wonders of tofu in four dishes

Sweet and Sour Asian Tofu

Ingredients:

  • 150gms extra firm or firm tofu
  • 2 tbsp oil
  • 1 tbsp sliced garlic
  • 1 tbsp chopped ginger
  • 1 tbsp slit green and red chillies
  • 3-4 no slit birds eye chillies
  • ½ cup sliced onions
  • 4-6 one inch peices of lemongrass
  • ½ cup carrots cut into cubes
  • 3-4 broccoli florets
  • 10-12 snow peas
  • 1/2 sliced yellow zucchini
  • ½ cup sliced green and red capsicums
  • ½ cup sliced green spring onion
  • Salt and pepper to taste
  • 2 tbsp soy sauce
  • 2 tsp chilli vinegar
  • 1 tbsp red chilli sauce
  • 1 tbsp green chilli sauce
  • 2 tbsp crushed roasted peanuts
  • 2 tsp honey
  • 1 tsp brown sugar
  • Water/stock as required to cook
  • Cornflour and water solution to thicken.

Method:

  1. Prepare all the ingredients for the stir fried tofu.
  2. Heat oil in a wok or pan.
  3. Add in the garlic, ginger, chillies, and sauté for 15 seconds. Add in the sliced onions and stir well.
  4. Add in the vegetables of your choice, tofu, seasoning, sauces, and a little stock/water. Allow to cook well.
  5. Cook for 2-3 mins, stirring occasionally. Add in the chilli vinegar and honey towards the end.
  6. Finally, garnish with peanuts and greens and serve hot.
  7. Try the same recipe with shredded chicken or sliced prawns or even fish cubes. You can also try using schezuan sauce as well to make it spicier.
