Masala Editorial

Siam Kempinski Hotel Bangkok has announced its third culinary takeover of the year with the highly anticipated arrival of Chef Varun Totlani and the team from Masque Mumbai, travelling to Bangkok for the very first time.

This exclusive collaboration will take place from 4 to 8 June 2026, culminating in a special, one-night-only partnership with one of Thailand’s emerging culinary talents, Chef Weerawut ‘Num’ Triyasenawat, on 9 June 2026.

Ranked No. 15 on Asia’s 50 Best Restaurants 2026, Masque currently holds the highest ranking for an Indian restaurant on the prestigious list. Under the innovative vision of Chef Varun Totlani, Masque captivates diners with its ingredient-driven Indian cuisine.

The restaurant’s menus celebrate local flavours and time-honoured cooking traditions, seamlessly blended with modern innovation and contemporary techniques, redefining a new era of Indian gastronomy.

During Masque’s residency at Siam Kempinski Hotel Bangkok, guests will experience an exceptional eight-course menu showcasing premium ingredients from Thailand. Signature ingredients include squid, sea buckthorn, clams, Thai wagyu, masala spices and aromatic herbs, creating a vibrant culinary journey from the first course to the last.

At the helm of Masque is Chef Varun Totlani, who was born and raised in Mumbai. Inspired from an early age by cooking programmes, he developed a passion for the culinary arts and pursued it wholeheartedly.

A graduate of The Culinary Institute of America in New York, Varun met the founders of Masque while returning to India and joined the restaurant as part of its opening team in 2016.

He was subsequently appointed Head Chef in 2022, a role he continues to hold today. His culinary philosophy celebrates the diversity of India’s produce and culinary heritage while pushing the boundaries of the country’s evolving contemporary dining scene.

Masque first debuted on Asia’s 50 Best Restaurants list in 2021 and is currently ranked No. 15. The restaurant has also been named the Best Restaurant in India for five consecutive years. In addition, Masque received the Art of Hospitality Award, and in 2025 is ranked No. 68 on The World’s 50 Best Restaurants list.

‘Masque Residency in Bangkok’ will be available over five days, featuring two lunch services on 6 and 7 June 2026 from 12:00 to 15:00, and five dinner services from 4 to 8 June 2026 from 18:00 to 23:00. The dining experience is priced at THB 4,950++ per person.

Exclusively for the Masque in Bangkok edition, Chef Varun Totlani will join forces with Chef Weerawut ‘Num’ Triyasenawat, one of Thailand’s emerging culinary talents, to create a culinary pop-up. Both will reflect their respect for their roots and heritage, with extraordinary touches of modern culinary techniques.

Prices are subject to a 10% service charge and 7% government tax.
