Lakshmi Puthanveedu

Bangkok is where culinary worlds collide to create scrumptious gastronomic delights. And this February, the Siam Kempinski Hotel welcomes Chef Pinaki Ray, renowned for his mastery of Indian cuisine at Singapore's Yantra, for an exclusive pop-up from the 20th to the 28th. Known for his innovative Indian cuisine at Yantra Singapore, Chef Ray is set to dazzle diners with a specially curated seven-course feast.

Chef Pinaki Ray's journey in the culinary world has been nothing less than extraordinary. His passion for Indian cuisine is celebrated across the globe, spanning kitchens from the prestigious halls of Raffles and Marina Bay Sands in Singapore to dynamic stints in South Africa. At Yantra Singapore, Chef Ray crafts dishes that are a dialogue between traditional Indian cooking and modern culinary innovation. His work showcases the diverse palates of India, bringing a nuanced understanding of its rich flavours and vibrant gastronomic culture to each plate he presents.

A Peek at the Menu

The feast starts with tantalising appetisers like Khoi Bora–an evergreen Bengali fritter snack–and Nizam Kathi Kebab, served with pickled quail eggs. It then continues with Bhutanese Ema Datshi and the luxurious Lobster Chiney Kebab taking your taste buds on a journey from Kolkata's streets to the Himalayas.

And when it's time to wind down after the main course, Chef Pinaki has prepared his favorite dessert: a saffron-infused South Indian ice cream. This nostalgic treat, inspired by his childhood, offers a divine fusion of rich flavours, crafted to provide a perfect end to this exquisite feast.

My commitment is to glorify the heritage and elegance of India’s bygone recipes. There are so many wonders and vibrancy in our food, and it is certainly diversified—full of flavours and stories.
