ChomSindh produces culinary brilliance born from nostalgic Thai waters.

Gastronautical Voyage

Mahmood Hossain

Home of freshwater seafood and rich Thai flavours, ChomSindh, located on the 4th floor of Amari Bangkok, pays homage to traditional recipes that have been passed down for generations. The brilliant chefs unleash their culinary artisanal arsenal on their carefully crafted dishes, each one more mouthwatering than the next. The combination of the freshest local catches and finest ingredients never allows a single ounce of complacency from the dedicated men and women cooking up a storm through the spotless glass barriers of the restaurant’s open kitchen. Watching them execute their craft is one thing, and another experience to devour their creations. I can enjoy Thai food on a daily basis, and I would never tire of it. When the opportunity arises to explore or discover a slightly alternative take on classics, it cannot be missed, just like the dining experience at ChomSindh.

THE AMBIANCE

From the silk walls to herb gardens, the restaurant strikes a fine balance between heritage and modern design. This creates a warm and welcoming environment for guests in a space that feels authentically Thai with a hotel-refined comfort. Inspired by a traditional Thai shophouse, the charm comes from the combination of dark wood, shuttered panelling, cosy upholstered chairs, scattered cushions, and various decorative pieces reflecting the restaurant’s nod to old-school family yacht voyages. Its intimate spacing is one of the more inviting places I’ve enjoyed dining in.

THE CULINARY SELECTION

The menu revolves around a ‘gastronautical’ journey of freshwater delights from the waters that warmly hug Thailand. With an abundance of aquatic resources and a commitment to sustainability, ChomSindh enables food enthusiasts to savour the vibrant flavours and intoxicating aroma of every dish. The combination of the two was consistent from the first dish my friend and I tried to the last.

We started our meal with the sweet embrace of Grilled bread with pandan and Thai tea custard cream (THB 165). If you want to start your meal with the welcoming ease and comfort of home, it’s probably a good idea to begin with this item. The Old fashioned stir-fried holy basil with tiger prawn (THB 590) provided quite the kick of spice, where flavours were evenly balanced, heat was well tempered, yet offered a sharp contrast to our starter dish in a very good way. The same can be said for the Spicy ChomSindh fried chicken wings (THB 210); however, with spice levels intact, this one will taunt you to get your fingers a little sticky and tear every morsel of the meat off the bone.

We then moved on to the ink persuasion with the Stir-fried squid with ink sauce (THB 450), painting our lips black with a satisfying grin. But the real surprise was the Squid ink rice with assorted seafood (THB 550). Amid the seafood fair, we were starting to wonder where the rice dish was. And there it was, delivered and exceeded expectations. The rice was perfectly cooked, absorbing the squid ink’s brininess to the point where the rich, layered oceanic indulgence nearly stole the show. The assorted seafood companions only enhanced the overall taste of the dish.

On the slightly tangier side, the Pomelo salad with river prawn (THB 390) offers a palate-cleansing and refreshing experience. To be frank, this is so easy to digest and delicious that I could have made the entire meal with it. Just when we thought the meal was coming to an end, the freshness didn’t stop there, as we were treated to the Tropical fruits in citrus and kaffir lime syrup (THB 220), Thai tea and Thai lemon tea (THB 145), and their signature cocktails: Saneha highball (THB 350) and Tara sour (THB 350). Each bite or sip of these wonderful vessels of a gentle breeze easily convinced me to revisit ChomSindh in the near future. Saying this is highly recommended would be an understatement.

THE MASALA CHOICE

The Crab curry with wild betel leaves and samut songkhram seablite (THB 590) was the absolute winner, triggering a pleasantly surprising and genuine expression on our faces. Of the countless times we’ve enjoyed the various styles of crab curry, this outing provided us with the ideal crab curry dish. Even more so, when my friend suggested mixing it with the previously mentioned squid ink rice. This particular combination, for lack of a justifiable term, was absolutely mind-blowing. Don’t thank us, just try it for yourself!
